
If you haven’t figured it out by now – I am a BIG fan of sweets 🍫 So, anytime I can come up with an easy “healthy” alternative I am thrilled. Last week I mentioned my favorite Peanut Butter Coconut Crisps 🥜 🥥 as promised, here they are:
ingredients:
– 2/3 cup of peanut butter
– 2 tablespoons of coconut oil
– 2 teaspoons of vanilla
– 1 cup unsweetened shredded coconut
directions:
1. place peanut butter and coconut oil in microwave for 30-45 seconds
2. then, add vanilla and stir to combine
3. add the shredded coconut and mix until evenly coated
4. take a spoon and dollop the mixture onto parchment paper
5. freeze until solid, about 15-25 minutes
6. ENJOY!
