Summer Chickpea Salad

Summer salads are my favorite and this one just might take the cake for the best one yet☀️ The Mediterranean Chickpea Salad – it’s SO refreshing and super easy to throw together 🍋 ⠀


– 2 (15oz.) can chickpeas, drained and rinsed⠀
– 1 medium cucumber, chopped⠀
– 1 bell pepper, chopped⠀
– 1/2 red onion, thinly sliced⠀
– 1/2 c. chopped kalamata olives⠀
– 1/2 c. crumbled feta⠀
– salt⠀
– pepper⠀

– 1/2 c. extra-virgin olive oil⠀
– 1/4 c. white wine vinegar⠀
– 1 tbsp. lemon juice⠀
– 1 tbsp. freshly chopped parsley⠀
– 1/4 tsp. red pepper flakes⠀
– salt⠀
– pepper⠀

1. First, in a large bowl, toss together chickpeas, cucumber, bell pepper, red onion, olives, feta, salt and pepper. ⠀
2. Next, in a medium size container, combine olive oil, vinegar, lemon juice, parsley, red pepper flakes, salt and pepper. ⠀
3. Shake container until dressing is well mixed.⠀
4. Add vinaigrette just before serving⠀
