
Ever since I can remember it has always been “Tostada Tuesday” instead of “Taco Tuesday” in our household. My mom used to make these for us all the time – it was her “healthy” spin on the Taco Bell Mexican Pizza. These tostadas can be easily adapted for little humans or picky husbands – I prefer spicy, Shane not so much. Shane loves to top his with salsa verde!
ingredients:
- 4 tostadas (linked the ones we use)
- 1lb of ground beef
- 1 white onion (chopped)
- 1 packet taco seasoning
- 1 can of refried beans
- sharp cheddar
- jalapenos
- optional: salsa verde
directions:
- preheat over to BROIL
- combine ground beef, chopped onion, and taco seasoning into a medium skillet and cook until beef is browned
- while the ground beef is cooking – prepare your base by laying out 4 tostadas on a baking sheet
- then, evenly spread the refried beans on each tostada – I completely cover the base of the tostada in bean but this is a personal preference
- once the ground beef is cooked – scoop about 1/2 cup on top of the refried beans
- next, sprinkle sharp cheddar on top of each tostada – again this is a personal preference of how much cheese – I used about a 1/4 cup on each tostada
- optional: top with jalapenos
- place baking sheet in oven for about 2-4 minutes or until cheese is completely melted (I usually wait until cheese is a little bit brown and crispy on top)
- lastly, top with salsa verde
- enjoy!
