Turkey Lettuce Wraps

EASY LUNCH – 1. 2. 3. GO! TURKEY LETTUCE WRAPS! I had a few messages asking me about what I do for easy and healthy lunches and these lettuce wraps are one of my favorite GO TO lunches! They take limited ingredients and are clearly EASY to assemble – not to mention they can be built using a variety of different ingredients.

For example, you could switch up the protein used – instead of turkey maybe you use chicken or ham. Don’t like tomatoes, take them off and add avocado! Everyone loves bacon, so I’m going to go ahead and assume that will stay put. As the for mustard, you could always spice it up with spicy mustard or Dijon mustard for a little extra flavor. Another idea is to add sprouts, red onion, cheese, etc. The options are endless PLUS this ensures that you never get sick of them!

ingredients:

  • romaine hearts
  • smoked turkey breast (sliced)
  • tomatoes (chopped)
  • 2 pieces of bacon
  • mustard

directions:

  1. Take two single romaine heart leaves (one leaf makes one wrap). Place desired amount of turkey breast. Then sprinkle bacon pieces evenly across both leaves. Chop tomatoes and lay across both leaves. Top with mustard or other desired condiment.
  2. ENJOY!

*I usually make mine the night before and start by laying the leaves in the container that I plan on using for my wraps to avoid having to transfer the wraps once they are made.
