Watermelon Feta Salad

SUMMER SALADS ARE MY JAM! There is nothing quite like crunching into a refreshing salad during the sweet summertime, and YES, I am aware that we haven’t seen any of this sweet summertime yet, BUT I am confident it will be here soon! In the meantime, I’ve just been practicing by enjoying this WATERMELON FETA salad, and dreaming of warmer days.

You’ll always know when watermelon season is upon us over here at littlehouseinop! Watermelon is hands down my favorite fruit, so when I can incorporate it into a variety of different recipes, I am one happy human! This Watermelon Feta salad is one of our summer favorites and is almost always on the menu because it takes zero effort to make. Not to mention, it’s so light, refreshing, and PACKED with flavor!

Humans, I am not kidding when I say this recipe is ridiculously easy. The recipe has a total of six ingredients that you throw into one SINGLE bowl. The longest part of this process is actually cutting up the ingredients before you can mix them!

Every time I make it, I make it a little different. This time I added mint and I am a BIG fan. However, Shane doesn’t love mint like I do, so I made him a small batch without the mint that was just as good. I will say the mint is very noticeable in the salad, so if you aren’t a fan you might want to skip it!

ingredients:

  • 1 medium watermelon or 1/2 of a large watermelon (chopped)
  • 2 cucumbers (chopped)
  • 6oz feta cheese
  • 1/4 cup mint (diced)
  • 1/4 cup olive oil
  • salt (to taste – I used about 1/2 teaspoon)!

directions:

  1. In large bowl, combine chopped watermelon, chopped cucumber, feta cheese, mint, olive oil and salt. Mix together with tongs (preferably plastic) until all ingredients are tossed. I suggest using plastic tongs because it makes it easier to mix without “smooshing” everything!
  2. Refrigerate until cold (about 25-30 minutes).
  3. SERVE & ENJOY!

NOTES:

*MINT is optional. I know some people don’t like the taste of mint and it is very noticeable within the salad. I absolutely love it, it makes the salad SO fresh! However, if you aren’t a fan the salad is still just as tasty without it!

*Storing the salad is as easy as placing it in an airtight container and keeping it in the fridge. The salad will last about 3-4 days before it the watermelon begins to lose its crunch!
